The Karithathi Farmer’s Cooperative Society has two wet mills, the Kiunyu Factory and Kabingara Factory. Together, the mills serve Karithathi’s farmer members who hail from villages across Kirinyaga County. Over 3,000 smallholders are registered with Kiunyu Factory; around 1,600 are active. In total, these smallholders deliver 775 metric tons of cherry to the washing station annually. Collectively, they farm over 900 hectares of coffee at 1,600 to 1,650masl.
What we're tasting...
The Kenya Karithathi has all the components we love about Kenyan coffee: high, sparkling acidity, medium to heavy body, and interesting, complex flavors. This is a great coffee that lots of avenues to explore as a pour-over. The Karithathi is a good fit for those looking for a bright, adventurous cup of coffee with a pronounced flavor profile. There are many nice brew recipes for this coffee, but we have gravited torward the clean results the chemex gave us. We opted for straight purified water as fortifications like Ca, Mg, and Na leaned the profile into a savory range. Increase your agitation on the first half of the brew to bring out the bright grapefruit and dried plum notes.
